Surprise! You have to work today... Argh!! But...  The beautiful tree above was my haven for lunch. So.. Can't really complain. Since it was a last minute work day I had a very thrown together lunch. Some steamed veggies with almond sliver for protein. Quite tasty! Random Yum: Spring Soup (?): mmm.....  So the first day it is a soup,  but as it sits in the fridge the broth gets absorbed and  it becomes more of a pilaf than a soup, but just as delicious. 1 c brown rice, black barley, daikon radish seed mix, uncooked 1 c Sliced mushrooms 1/2 c Frozen peas 1 bunch of celery chopped 1T 21 spice seasoning 2 loves garlic 4 cups of water (i didnt measure this just add enough to cover all  ingredients with extra 1/2 inch) 1) Put all ingredients in an oven safe bowl with a lid 2) "bake" at 350 for 40 minutes Random Craving: Brown Rice pasta with white beans and steam veg

My Milkshake.....

Bad salad! Go to your room and think about what you did!! I thought this would be a good salad combo. Romaine topped with chickpeas and hummus. However there weren't enough veggies and it needed some fat. The good thing is it became the base of a better salad. But I didnt get a pic of it. But don't fret! I got a picture of the beauty below: Pasta salad with brown rice rotini, kalamata olives, chopped tomato, cucumber, carrot chips and greek dressing. Things I forgot to mention...   I went to the $1 sale at Avalon an extremely happening resale shop.  I was able to score quite a few great items. Quite a few were brand new, which is always nice when you are on a (tight) budget. Just a few tags Also went to a very chic Milkshake shop with the fam. Stars and Crystals and other Natural Beauties

Found this beautiful fortress of solitude attached to the lid of a  container of fresh mangoes hidden in the freezer last summer. Pic above is a little hard to see, but tonight Jupiter is to the left of the moon (brightest spot) and Venus is visible below the moon near the bottom of the frame (Click on pic and zoom) This was on the evening of February 26th. I think it was the apex of the event. Maybe not, but I really wanted to say apex. That's right! Word Nerds unite! So the moon is the bright spot and Jupiter is to the left about an inch and  then Venus is the little bright spot near the bottom of the pic below the moon. Isn't amazing how bright the moon is when its only reflecting the light of that big beautiful burning star we affectionately call the sun? It's raining....Let's burn something

I'm talking about candles you pyromaniacs! :-) Please don't burn any food! It's wasteful and toxic to your lungs. But feel free to burn some non-sooty candles. And by some I mean at least 10 because today it's raining and snowing. Brown Rice Noodles w/ Tomatoes spinach and nooch sauce  Did you know Trader Joe's has loads of veg and gluten free foods? Their Brown Rice pasta is really tasty (when cooked properly..AKA not too long..oops). And the texture makes it a great carrier for creamy sauces. Sometimes dairy free sauces don't adhere to pastas, but not so with brown rice pasta. I'm having a romance with Nutritional Yeast at the moment (Yay b-vitamins!) and one of my favorite ways to enjoy it is smothering pasta. Brown Rice Pasta just sounds so healthy, but who cares about healthy when it tastes so good. Nom nom nom! Random side note... Look how pretty the trees were! This is a few days ago... ...

What to eat when you don't feel like eating...

The list is really long as I often am without an appetite. Who knew stress (and PMS) has good side affects. lol Sorry for the TMI bro! Reaching for carby, slightly sweet things is a surefire way to warm the insides and get some nutrients in. But ive been known to eat a salad topped with protein (quinoa or garbanzoes) and some fat (olive oil and avocadoes please). Single Girl muffin or cupcake: mmm...muffin! Frozen Gluten Free Waffles with pan sauteed Cinnamon Apples: Something about the smell of apples and cinamon that gives me an immediate appetite boost. waffles on a tacky plate On a Final note: Smoothie is a food group.... But it contains a couple food groups making it an ideal "meal" for one not wanting a "meal". When properly made they contain fruit protein veg carb and whatever else you can stuff in the blender. On a not so final note..... Im going to Dublin, Ireland for my next missionar...

Spring Fever = Understatement

Okay so its 4 more days until spring, but the weather is decidedly summer-like. Im definitely not hating the warm weather, but I'm worried we will have a blizzard in April as payback. Am I the only one worried about that? Probably...lol I really want to pop on my awesome healed sandles purchased in the dead of winter!!! Recent Eats The Health Starts Here Mediterranean Crunch Salad from Whole Foods was out of this world yummy.  Very simple ingredients, but the flavor profile was complex. But more on that in a minute.... Nooched out Quinoa topped with sauteed mushrooms celery and spinach. This was surprisingly delicious dish born of desperation. Two basic elements combined deliciously: Part 1(bottom): 2 T Nutritional Yeast + 1 T Udo's Oil + 1 cup cooked quinoa and a sprinkle of Spanish sea salt stir all ingredients together Part 2 (top): 3 chopped stalks of celery + 1/4 c frozen spinach + 1/2 cup sliced baby bell...
