Accidental Lentil Chili

Accidental chili! With avocado! Exclamation point!   I have been craving chili like crazy. And you know how I love accidentally creating things. So I was going to make more lentil soup.   Like this:     Using this:   Pinjur by Konex Foods   But I added too much in my zealousness to get more veggies in. And it amazingly turned into chili (see pic above). When I tasted it and realized how much it tasted like chili I did the only natural thing you do when you realize you have accidentally made chili..... grab an avocado!!!!!   Get you some!   I got this accidental chili starter at Big Lots. It's loaded with: peppers, eggplant, tomato paste, garlic. Some of the best things in the world! Hat, Hat, Hooray!

It's hat season! Yay! I think my hair looks so pretty under that hat. Why can't it always look like that?  Here's the detail on the side of the hat. Cute, no? And now for a creepy close up... Yikes! A face only a mother could love. Unless you have my mother. She still makes me wear a brown paper bag at the dinner table. Don't feel bad for me because at least now im allowed to poke holes in the bag so i can see my plate... Okay thats not true. Last time I ate dinner with my family it was not around a table. And my mom is super nice! Too nice if you ask me! Enough with the fashion. Where's the food? Isn't this a food blog?   Oh there it is! This was lunch. Very delicious for no real reason. Mixing my Metaphors, etc.

I have a very serious adoration for all things Greek, culinarially speaking. A current food obsession of mine is mujadara, a yummy dish of lentils and rice cooked with cumin and topped with carmelized or frenchfried onions. The classic Greek flavors are fresh and vibrant including olive oil, lemon, oregano and thyme so that even something heavy like lentils taste light. Never being one to settle for delicious i took it to the next level adding avocado. But then I got a little crazy and decided to try a further variation by cooking the lentils with quinoa adding tomatoes mushroom and Trader Joes 21 Seasoning blend then topping it with avocado and adding some Food Should Taste Good Olive chips on the side. This would make a great dip for an easy appetizer tray, but its so yummy in a bowl eaten with a spoon, which is how i had it for lunch today. Very yum!
