As soon as it snows it is officially pancake season! Yay! Oh wait.... It is ALWAYS pancake season! Triple yay! Just looking at pictures of pancakes makes me want some! Look: Topped with some melty peanut butter and Tastefully Simple blueberry burgundy jam. Oh the benefits of living with a consultant! Whoever thought it was a good idea to combine blueberries and burgundy wine is a complete genius! Get. It. I ate half this jar for research purposes only! *cough* moving on.... Whole Foods dinner..... What is it with shopping for food that makes me too tired to cook? So I didn't even try to fight. Stuffed faux turkey with olive oil mashed potato and faro stuffing. Market District Randomness..Caffeine kills fatigue

While I totally do not condone the use of controlled substances to deal with everyday (or monthly) problems, I really could not resist this adorable cappuccino. I had some pretty serious "I could lay down on the ground (despite my OCD) and take a nap" type fatigue going on and really needed help to get through the day. If you suffer from fatigue you know what I'm talking about. It's the kind that is not solved with 8 hours of sleep. Sometimes 10 hours doesn't help either. But truthfully I get insomnia when I get fatigue (love those monthly gifts) add ina busy schedule and I was beat like a pinata. But this lovely, tasty cup of indulgence powered me through the work day. Soy milk cap with a shot of almond syrup. Oh. Yeah. Baby. And now for a touch of randomness.... Gluten Free Blueberry Pancakes!!

This recipe was accidentally gluten free. I just didnt have any flour, but did have a crazy craving. I had these beauties to carb up for Zumba class. So tasty! Oatmeal Pancakes for One Ingredients: 1/2 c Oatmeal flour (oats ground in a smoothie maker) 1t baking powder 1T sticky rice flour (optional) 1 pinch salt 1t vanilla 1/4 c milk or water 1/4c frozen blueberries (or any frozen fruit) Topping: 1 T honey 1/2 T coconut oil Process: mix all dry together slowly stir in wet stir in blueberries cook like a pancake top with coconut oil and drizzle of honey But while we're on the subject...... Here is a yummy burrito I had on Saturday (the day that never ended). The filling was exactly like the original bean and rice  (delicious) but the wrap is different.
