Summer is Rolling

 So, really embarrassing story to share...... I know the month is going rather quickly (didja notice?) But Wednesday I thought it was going at a "week for a day" type pace. Got to work and was looking at the calendar and thought to myself "I cant believe its the 22nd already!" But that just didn't seem right so I looked again and it said "Friday 22nd" It was actually "Wednesday the 13th" but someone thought it would be fun to switch the calendar and not switch it back. Clouds, Pasta and Liquid Rain

Have the clouds been rediculously beautiful where you live? Big and fluffy and decadent? They sure have here. I find myself just staring up at the sky when Im outside. But not when Im crossing the street. Okay maybe once, but I was in the lines of the cross walk And the white person was telling me I could cross. liquid sunshine Even the rain shower yesterday was accompanied by some beautiful cloud-age. It was more of a Liquid Sunshine Situation since the sky was still predominantly blue. Remember liquid sunshine from my Hawaii posts? It would spontaneously start raining and the sky would be almost completely blue with a few white clouds. Lovely! OH! For Me???? So I came home the other day and the above was sitting on my porch. Gluten Free Blueberry Pancakes!!

This recipe was accidentally gluten free. I just didnt have any flour, but did have a crazy craving. I had these beauties to carb up for Zumba class. So tasty! Oatmeal Pancakes for One Ingredients: 1/2 c Oatmeal flour (oats ground in a smoothie maker) 1t baking powder 1T sticky rice flour (optional) 1 pinch salt 1t vanilla 1/4 c milk or water 1/4c frozen blueberries (or any frozen fruit) Topping: 1 T honey 1/2 T coconut oil Process: mix all dry together slowly stir in wet stir in blueberries cook like a pancake top with coconut oil and drizzle of honey But while we're on the subject...... Here is a yummy burrito I had on Saturday (the day that never ended). The filling was exactly like the original bean and rice  (delicious) but the wrap is different. June? JUNE!

Did june sneak up on anyone else like it did me? It came up behind me quietly and smacked me in the back of the neck with a feather. Yup! Thats the truth. It happened just like that. Oh look! More soup! Soup is so hearty and filling. Its a great budget meal and so very balanced. This one was stellar. And for once well photographed. Good job me. I could so eat (i.e. inhale) one of these right now. The ingredient list is pretty simple but the flavors blend wonderfully. Instead I think Ill make blueberry pancakes for dinner tonight. I need to carb up for zuumba. Ill use vanilla almond milk and throw in some extract I like it when I open a tea bag and I can see exactly whats in the tea. Starbucks has some great tea bags. No I did not break budget and go to Starbucks. My friend treated me to some tea from there. It was really cold early on morning last week. So there!
