Yum, Yum Eat Em Up



Do you ever have no idea what to make for dinner?
Of course you do. Unless you are a cyborg..
Not that there is anything wrong with that....

So, here's an idea to answer the age old question "What's for dinner?" This infamous question has been asked ever since the dinosaurs roamed the earth. Except back then it was more a question of "Who's for dinner?"

I dunno. I was thinking Benny Brontosaurus.
Isn't he married to your sister?
Yeah, so? Mom can't stand the guy.
That's wrong dude! They have an egg in the nest..
I heard the Stegosaurus family is migrating through here for their family reunion.
I could eat one of them!

Just don't be like Cleopatra! She got so frustrated over what to make Mark Anthony (not to be confused with Marc Anthony although it seems neither one wore pants) for dinner she decided to just sit down and eat a basket of figs. And...well.. You know the rest of that story.

Anyhoo, some people call this clean out the fridge soup. But that sounds frightening to me. AND furthermore I do not want to get sued when someone eats some fuzzy beef stew and gets deathly ill.

So, let's call this "I really want to make a Whole foods and/or Trader Joe's run, but I can't justify it with food in the fridge, so I better get to eaten"

I know, I know.. That is a really long title. IT's nickname is "Eat It Up Stew"

Eat it Up Stew
Of course this recipe will vary depending on what leftovers you have,
but you will get the basic idea and the seasoning creates an amazing
broth that could stand on its own or with any ingredients.


1/2 bag frozen green leafy things (i used whole foods mustard/kale/collard blend)
1 zucchini sliced
1 can beans (cannelini(white kidney))
1/2 c stir fried shredded cabbage and carrots
1/2 T Italian seasoning
1 clove of garlic
1/2 lemon juiced (2 T if its not an actual lemon you are using)
2 T olive oil (extra virgin if you got it)
1 t sea salt
2 cups water

1) heat 1 T olive oil and saute the green leafy things.
When greens are almost melted add zucchini and Italian seasoning

2) 1 - 2 minutes add water (you want the zucchini to just start to wilt..this will prevent it from getting too mushy while cooking or when left in the fridge overnight..unless mushy zucchini is your thing)

3) add in the stir fry and beans and if you are a wuss throw in the garlic now
let it simmer for 5 minutes(10 if you added the garlic..wuss).

4) turn off the heat but do not remove from hot burner.
Add lemon, 1 T olive oil and sea salt (and garlic if you are not a wuss)
...stir twice and smash a few of the beans (alternatively you can blend half the can of beans in a blender before adding if you'd like a thicker broth)

5) cover and let sit for 5 to 10 minutes.

6) devour!
