Weekend Eats.. With Captions!!!

Friday July 1st

B: * 2 Banana and 2T Peanut Butter

L: * Chickpeas spinach and Italian sea salt (My alarm went off at 7:30 and my bus comes at 7:47, so I had time to shower, dress, open a can of chickpeas, pour them in a microwave safe carrying bowl, throw in some spinach and some seasonings and run out the door. Exciting!)


D: * Sunflower pesto pasta(semolina pasta, organic baby spinach, basil, lemon juice, extra virgin olive oil, sunflower seeds, organic garlic , sea salt)

* Thai broccoli salad (broccoli, Red pepper, scallions, cilantro, orange juice, mirin, tamari, sesame oil, ginger, garlic) (Seriously tasty! If not for the price I would get it again and again, but I will try to make this at home if i get a deal on fresh broccoli.)
* sunflower cookie (organic oats, organic sunflower seeds, clover honey, organic tahini, organic spelt flour)(Not really a cookie in my opinion as it wasn't sweet enough. They could tout this as a meal replacement or protein snack.)

Saturday, July 2nd
B: * banana milkshake (1 frozen banana, 1 cup unsweetened vanilla almond milk, Cinnamon, vanilla and blend)

L * Lentils and shitake gravy and spinach (so creamy and yummy, made with a gravy packet and taken to a whole nother level with the addition of fresh mushrooms)
* 2 T peanut butter and 2T agave (so decadent tho I wish I had fruit to eat with it..banana or apple..yum)

D * salad (at a jewelry party)
* fruit salad (cantaloupe grapes strawberry watermelon pineapple)(also at a jewelry party)

* summer roll with tofu from a Thai restaurant (rice paper, vermicelli,leaf lettuce, fresh mint cilantro and basil, carrots)(These things are the cure for the winter blues and a delicious fresh dish in the summer. Yum!)
* 1 spring roll(cabbage and carrots) (also from Thai restaurant)

Sunday, July 3rd
B: * 2 banana milkshake (2 frozen banana, unsweetened vanilla almond milk, cinnamon, vanilla)

L: * 1 can chickpeas and spinach with Italian sea salt (I actually really enjoyed the rush lunch from Friday and repeated it today.)

D: * 2 plates tortilla chips with salsa (oh my friend tortilla chip! Its been too long!)

Monday, July 4th
B: * Garbanzo vanilla milkshake (1/2 c garbanzo beans, vanilla, unsweetened vanilla almond milk, cinnamon, a load of agave b/c i was scared this would take like sweet hummus...It was actually really yummy and filling)

S: dried cherries (during the action movie i saw with fam)

L: * Boca veg burger on whole grain bun with lettuce tomato onion pickle ketchup mustard 2 sides fries(not as greedy as it sounds sine it was the very small side that came with burger and then an extra basket. Red Robin! Always a good treat! Everyone can find something on the menu! Ribs for the brother, fried zucchini for mama, chicken sandwich for sis and veggie burger for moi. Sorry, what did you say? I couldn't hear you over the chewing...(oh and some ribs to go for papa who couldnt come. :())

D: * Chickpea flour pancakes (3/4 cup chickpea flour, cinnamon, unsweetened vanilla almond milk, vanilla, baking soda) (Surprisingly good, but next time I think I will try it with almond butter in the batter or on top to further smother the chickpea essence..Better yet I will try a "savory" variation. Im imagining nutritional yeast, italian sea salt, spinach..top them with salsa...hmmm...)
